Bread – Wholemeal rye raisin pine nuts

This is a unique healthy bread recipe made with wholemeal, rye, golden raisin, pinenuts and whey. why whey? I make cottage cheese(paneer) often at home and I get a good amount of whey. After stumbling upon the health benefits of whey and how it can be used, I decided to make bread with it:) and hey, no whey? no worries…you can substitute with water:) . The pine nuts smells amazing while baking and when eaten with slightly salted butter, it is so mmm…

Wholemeal rye raisin pinenut bread recipe in detail
Serves : 4

Ingredients:
For dough:
************
1 cup wholemeal flour
1/4 cup rye flour
1/2 cup all purpose flour/plain flour
2 tsp bakers yeast, 2 tbsp canola oil, 1 tbsp butter
1/2 tsp baking powder
1/4 tsp baking soda, 1/2 tsp salt, 2 tsp sugar
warm whey or water

While rolling bread add:

1/2 cup Golden raisin (soaked in 4 tsp sugar+water)
1/4 cup pine nuts

->You will be doing:
-Soak the raisins
-Make the bread dough
-Roll the bread
-Bake

Part 1) Soak the raisins

Step 1) Soak the golden raisins. To a bowl, pour 3/4 cup of warm whey or warm water. Add 4 tsp sugar and stir. Add 1/2 cup golden raisins. Cover and keep the bowl in a warm place to soak for 30 minutes.

Part 2) Make the dough

Step 2) To a large bowl, add 1 cup wholemeal flour, 1/2 cups of all purpose flour(also known as plain flour/standard flour/maida), 1/4 cup rye flour, 2 tsp bakers yeast and mix. Add 1/2 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp salt, 2 tsp sugar and mix. pour the soaked raisin whey/water (water only NOT THE RAISIN:)

Step 3) Pour some more warm whey or waterand combine to a soft dough using a big tablespoon

Step 4) After combining to a soft dough, pour 2 tbsp canola oil and combine well with the spoon

Step 5) Sprinkle some flour over the dough and knead for a minute

Step 6) Cling wrap the bowl and place it in a warm place for an hour

Part 3) Roll the bread

note->You can use the regular bread bin to make this bread. I decided to make 4 mini-breads using 4 mini-loaf pans:)

Step 7) Grease the sides and bottom of the bread bin using butter

Step 8) Divide the raisins into 4 equal portions (for 4 mini-breads).( skip this step if making a single loaf)

Step 9) Divide the pine nuts into 4 portions (skip this if making a single loaf)

Step 10) Dust the rolling surface with flour

Step 11) Divide the bread dough into 4 equal balls (for 4 mini breads).(skip this step and goto step12 if making a single loaf)

Step 12) Flatten the dough balls using fingers( dust the fingers with flour and flatten if sticky)

note-> The size of the flattened dough should be equal to the wider side of the bread bin

Step 13) Press 1 section of the divided raisins into the dough (press entire raisins for a single loaf)

Step 14) Press 1 section of the divided pine nuts into the dough (press the entire pine nuts for a single loaf)

Step 15) Brush the edges of the flattened dough using little water

Step 16) Slowly roll the bread from one end to the other end

Step 17) Press and seal the edges

Step 18) Place it inside the bread bin

Step 19) Do the same for the rest of the 3 dough balls and place it in the bread bins

Step 20) Place them in a warm place for 30 minutes.

Part 4 – Bake the bread

Step 21) Preheat the oven for 10 minutes at 190 C (350 F)

Step 22) Brush the top of the breads using melted butter

Step 23) Place them in the centre rack of the oven and bake for 20 -25 minutes
(till the top looks light orangish brown)

Step 24) Once ready, take out and place them on a cooling rack/wire rack

Step 25) After a minute, take out the breads from the bin and place on the cooling rack

Step 26) Let the breads cool completely before cutting (takes 45 minutes to an hour to cool down)

Step 27) Time to slice and eat:)

Yes, you can use water.
